Homemade Tomato Soup

DELICIOUS HOMEMADE TOMATO SOUP

Do you have a meal that was so delicious, you can’t get it out of your head? And then you just want it on repeat for weeks on end.. We went to Germany in September 2023 with some of our good friends and I had the most delicious, creamy, fresh tomato soup of my entire life. And I have been trying to recreate it ever since!

I have to be honest, this recipe still can’t compare with what I had in Germany, but I mean come on, it was freaking Germany! This is a great, second best option in my humble opinion. And it still gives me that feeling of sitting outside at a little pub in Germany during Oktoberfest with some of our best friends.

The best part about this specific recipe is that it’s so easy and you probably have everything in your pantry or fridge already!

You will need a blender of some sort for this recipe. My husband got me this immersion blender for Christmas, I have the matching cordless mixer too, and I absolutely love it! Plus, it’s gorgeous!

Ingredients for this Delicious Tomato Soup:

  • 2 cans of fire roasted tomatoes – you could use fresh and roast yours in the oven but this way easier, and quicker 😉
  • 1 can tomato paste
  • 1/2 large white onion chopped – purple onion works great too
  • 2 tsp minced garlic
  • 1 tsp heavy cream
  • 1/2 cup chicken broth
  • Basil
  • Thyme
  • Rosemary
  • Oregano
  • Salt & Pepper
  • All the spices to taste – I typically 1/2-1 tsp each

Steps:

  1. Saute 1/2 onion and 2 tsp minced garlic until fragrant. This usually takes just a couple of minutes.
  2. Add 2 cans of fire roasted tomatoes, 1 can of tomato paste. Next add roughly 1 tsp of each of the spices and salt to taste. I’m trying to use more fresh herbs, so add the equivalent.
  3. Add 1/2 cup chicken or bone broth and let this simmer for roughly 10 minutes.
  4. Use your immersion blender or other blender/food processor until you get a creamy puree.
  5. Add a tsp of heavy cream to get it extra creamy. You can add more if you’d like but my husband doesn’t like it to get too creamy.
  6. Serve with a slice of delicious Sourdough Bread and enjoy!

This is recipe is perfect for this cool fall and winter nights. But heck, I’m going to be making it all year long and think of our wonderful trip to Germany!

This recipe freezes super well and is so easy to reheat in a sauce pan. I use these silicone freezer cubes for all of my soups and love them! When it’s time to eat the frozen soup, I just put the frozen block in a sauce pan, heat up, and enjoy!
