CHICKPEA COOKIE DOUGH LIKE YOU’VE NEVER HAD BEFORE

I have been wanting to try Chickpea Cookie Dough for years!

I always found recipes that still called for brown sugar or syrup, and I thought if I was going to go through all the work to make it “clean” (even though that’s not my majority diet!), I was going to go all in. Otherwise, I’d be cool with still eating my regular, sugar-filled cookie dough from the store.

I love switching out ingredients for “healthier” alternatives when I’m able and creating my own recipes. And alas, I have tested out a recipe that requires no added processed sugar. With the help of a little secret ingredient, this recipe has the perfect amount of sweetness!

Ingredients:

  • 1 can Chickpeas
  • 1 Tbsp Old Fashioned Oats
  • 5 pitted Dates this is going to give such a natural sweetness
  • 1/4 cup Almond or Peanut Butter
  • 1 tsp Blue Agave
  • 1 tsp Vanilla
  • 1/2 tsp Almond Extract
  • a splash of cold water as needed

Have I been living under a rock? Where have dates been all my life?!

I don’t know why I’ve never bought them before.. I guess I thought they were expensive and thought you had to get them from Whole Foods or someplace. Turns out their actually quite affordable, and even Walmart carries them! They also make a great substitute for sweet ingredients or cravings.

I’ll be honest, the most tidiest part of this whole recipe was pealing the chickpea shells off of every single pea. It probably took me about 5-8 minutes just to do that part. I simply pinched each chickpea and the shell easily started to come off. If you don’t peal the shells off, you won’t get the creamy cookie dough consistency.

I soaked the dates in water prior to adding them to the blender. This just softens them up a little bit and makes it easier for them to blend.

Next, I blended just the old fashioned oats in my NutriBullet Blender so that it turns to fine power. You can also use a food processor or whatever equipment you have to get all the ingredients blended.

Then, add in all the other ingredients into your blender. Blend for short bursts as it will get a thick and clumpy before it gets smooth. I added a small splash of water to make it easier to blend.

Finally, you can fold in your chocolate chips or whatever other toppings you’d like. I used dark chocolate nibs from Aldi.

Enjoy! Now you have the perfect snack throughout the week to curb that sweet tooth.
