SUPER EASY AND AFFORDABLE, ONE POT CHILI RECIPE

This is one of our all time favorite meals to make in the fall and winter. It’s super easy, only uses one pot, is super affordable, and has the perfect little kick to keep you warm!

We make this recipe once a week in the cold months and haven’t gotten sick of it yet. Clean up is a breeze and we have leftover meals for a couple of days. The best part is that it tastes even better the next day!

And yes, this recipe has beans – because that’s the only way to make chili! I just learned a couple months ago actually that there are people out there who make chili without beans – what?!

Follow these easy step-by-step instructions to serve to your family or serve to impress your guests!

As a bonus, this super easy recipe comes out to be roughly $3-4/serving! And it can be ready to serve in less than an hour.

What you need for the Super Easy One Pot Chili Recipe:

  • Instant pot or large pot
  • 1/2 onion
  • Garlic cloves or minced garlic
  • 2lbs ground turkey or beef
  • 2 cans chili beans
  • 1 can diced tomatoes or 3-4 fresh diced tomatoes
  • 1 can Rotel
  • 1 green pepper
  • 1 jalapeño
  • 1 taco seasoning packet
  • Additional spices: chili powder, cumin, paprika, and pepper

Now let’s get to cooking this super easy chili

  1. Start by chopping 1/2 an onion (we’ve used white and purple and love both). Sauté in your instant pot for a couple minutes and then add a spoonful of minced garlic. Pro tip: Make sure to keep stirring because that instant pot will get very hot on the sauté setting.
  2. Next, add roughly 2lbs of ground turkey to the instant pot with onions and garlic. Also add in the packet of taco seasoning and brown the turkey. Pro tip: We usually buy the 3lb ground turkey and cook it all at once. We then take out 1lb to save for later to make tacos or turkey rice bowls later in the week.
  3. Once you’ve browned the turkey, now add everything else to the pot! 1 chopped green pepper, 2 cans chili beans with the liquid, 1 can Rotel with the liquid, 1 can diced tomatoes (or 3-4 fresh diced tomatoes) with the liquid, 1 jalapeño (keeping some of the seeds if you like the spice), and roughly 1/2 teaspoon each of chili powder, cumin, paprika, and pepper
  4. Put on the lid and click that chili button. Your dish should be ready to serve in roughly 15 minutes.
  5. Add any toppings you desire, I created a list of some of family favorites!
